La Maison Arabe

La Maison Arabe is more than a handsome medina riad: its identity begins at the table. In 1946, Hélène Sébillon-Larochette and her daughter Suzy opened what the hotel describes as the first restaurant in the medina accessible to foreigners, learning Moroccan cooking with help from the household of Pasha Thami el Glaoui. Count Fabrizio Ruspoli restored the property in the 1990s as an early boutique riad-hotel, and that layered history remains visible in carved timber, coloured glass, planted patios and rooms that differ one from another. Today, 45 rooms and suites occupy the garden wing, inner patios, an adjoining douiria and Pasha residences. The medina pool is intimate; a complimentary shuttle opens a second rhythm at the Country Club in the Palmeraie, with a larger garden pool, kasbah and Berber tent. Back in town, two hammams, several dining moods and hands-on classes at the cooking school make this an especially coherent choice for travellers who want culture and gastronomy woven into the stay rather than added as excursions.
